Areas of Specialization/Research Research Interests: Inhibition of angiogenesis using functional foods with emphasis on macular degeneration (and related precursors) and certain types of cancers such as breast, leukemic, and pancreatic cancers. Functional foods of interest include: marine collagen, lutein, phosphatidylglycerol, marine ceramides, animal and plant proteins, plant phenolics, phenetylisothiocyanate, fenugreek and blackseed. Future Research: Development of food-grade nanoparticles for delivery of anti-angiogenic functional foods. Functional food formulations based on reduced expression of inflammatory genes.
