EatSmart Recipes - Baked Potato with Chili & Cheese

INGREDIENTS

DIRECTIONS

4 medium sized baked potatoes

4 teaspoons margarine

4 oz cheddar cheese

Chili:

½ lb lean ground beef or ground turkey

16 oz. can kidney beans, undrained

2 teaspoons chili powder

No-salt-added tomato puree

Preheat oven to 400°F. Punch holes in potatoes with fork and place in oven. Bake for 2 hours.

Chili:

1. Brown ground meat. Drain excess fat from meat.

2. Add chili powder, beans with liquid, and tomato puree.

3. Bring to a boil, reduce heat, cover and simmer 10 minutes, stirring occasionally.

4. After potatoes are finished baking, cut them in half and place 1 teaspoon of margarine in each potato. Place ¼ cup chili on each potato and top with 1 oz cheese.
