EatSmart Recipes - Peanut Butter Snack Loaf

INGREDIENTS

DIRECTIONS

½ cup peanut butter, smooth or crunchy

½ cup sugar

1 egg

½ cup water

1 teaspoon vanillavanilla

1 ¾ cup biscuit mix

1. Preheat oven to 350°F.

2. Lightly grease an 8x4-inch loaf pan.

3. Beat peanut butter and sugar with an electric mixer at medium speed until well blended, about 2 minutes.

4. Mix egg, water and vanilla thoroughly. Add to peanut butter mixture.

5. Add biscuit mix and beat just until smooth.

6. Pour into pan.

7. Bake until toothpick inserted into center of loaf comes out clean, about 40 minutes.

Serving suggestion:  May also be made into muffins.  Adjust  baking time to approximately 25 minutes.

Makes 1 loaf or 1 dozen muffins.
