EatSmart Recipes - Chocolate Peanut Butter Cookies

INGREDIENTS

DIRECTIONS

  • 4 cups flaked cereal, crushed to 1 cup
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup unsweetened applesauce
  • 1 cup crunchy peanut butter
  • 2 cups firmly packed brown sugar
  • 2 egg whites
  • 2 teaspoons vanilla
  • 1 teaspoon chocolate flavoring
  • Vegetable cooking spray

Stir together first five ingredients. Set aside.

In large mixing bowl, beat together remaining ingredients. Stir in cereal mixture, thoroughly combining. Drop by rounded tablespoon onto baking sheets coated with cooking spray.

Bake at 375 degrees F about 12 minutes or until lightly browned around edges. Cool on wire racks. Store in airtight container.
