EatSmart Recipes - Garden Salad

INGREDIENTS

DIRECTIONS

3 cups various lettuce leaves

1 cucumber

1 tomato

1 bell pepper

Optional ingredients: 1 peeled carrot; ¾ cup chopped celery; 1/2 cup canned and drained black beans; 1/2 cup cheddar cheese, grated; 1/4 cup sunflower seeds;  1/4 cup dried cranberries or blueberries; 1/2 cup sliced strawberries. 

1. Tear lettuce leaves into small pieces and rinse, using a colander. Shake excess water off. Place lettuce in a large bowl.

2. Rinse cucumber and bell pepper and chop into bite-sized pieces. Add to lettuce.

3. Rinse tomato and slice into wedges. Add to lettuce and cucumber.

4. Rinse and chop any optional ingredients into bite-sized pieces. Add to lettuce, tomato and cucumber.

5. Chill salad in refrigerator before serving.
