Foods Festival

The annual Lincoln Parish 4-H Foods Festival will be held February 16 at
the Historic Fire Station at 200 E. Mississippi in downtown Ruston. It starts at 5:30 p.m.  Contact MRS. AMANDA or MR. GARY if you have any questions!

General Rules:

  1. Provide seven (7) typed copies of the recipe using recipe form attached to this newsletter.
  2. Contestants can only enter one division in each contest.
  3. The dish must be prepared the night before and chilled in refrigerator.
  4. Dish must be transported to the contest on ice or in ice chest. ***Dishes not chilled and transported on ice or in ice chest will be disqualified***
  5. The entire recipe must be displayed for contest.

Beef

Minimum of 1 pound ground beef must be used

  • Low Calorie—Provides less than 200 calories per serving; list calories per ingredient.
  • Quick & Easy—Ready to serve in less than one hour; list time for each step.
  • One Dish Meal—Provides foods from at least three main food groups; list food groups used

Poultry

  • Chicken—Contains a minimum of 2 pounds bone-in or 1 pound deboned chicken. Does not include processed, nuggets, canned, etc.
  • Processed Poultry—Contains a minimum of 12 ounces processed, value-added poultry products. Includes all turkey meats, chicken nuggets, smoked chicken, chicken strips, etc.
  • Other Poultry Meat—Contains a minimum of 2 pounds bone-in or 1 pound deboned meat from a bird other than chicken or turkey. Examples are duck, quail, dove, emu, ostrich, pheasant, pigeon, guinea and grouse.

Egg

Minimum of four (4) eggs must be used; can be four whole, four whites or four yolks, or a combination. No raw eggs in final product.

  • Appetizer/ Salad
  • Main Dish
  • Dessert

Seafood

Seafood—Minimum of 1 cup seafood: Fresh, frozen, pasteurized or dry. No raw seafood.

  • Oyster
  • Crab—Cannot use surimi nor artificial crab made from fish.
  • Shrimp
  • Crawfish
  • Fish or other Seafood

Pecans

Minimum of 1/2 cup of pecans must be used; may be whole, chopped, halves or pieces.

  • Cookies
  • Candy
  • Other—May include a main dish, salad, appetizer, etc. but not a dessert or a bread item.
