Toasted Pumpkin Seeds

How to Toast and Roast Pumpkin Seeds

1.  Rinse pumpkin seeds in a colander under cold water and pick out the pulp and strings. Dry with paper towels.

2.  Coat 1 cup of seeds with 1 teaspoon olive oil and 1/2 teaspoon seasoning of your choice. NOTE: You can use any seasoning blend you like (cajun seasoning, worcestershire sauce, soy sauce, garlic salt, sugar-cinnamon, and all-spice are some of the many possibilities.) Adjust the amount to your taste buds.

3.  Place the pumpkin seeds in a single layer on a baking sheet coat with nonstick cooking spray.

4.  Bake at 250 degrees F until toasted, about 1 hour, checking and stirring every 15 minutes.

5. Let cool and store in an airtight container.

Substitute these pumpkin seeds for your usual nut or seed topping.
