Confucius Says! 4-H is Worth a Fortune
This year's 4-H programs will focus on safety. Youth will learn about safety practices related to severe weather, Internet use, money management, bicycle and car use, water sports and outdoor activities and relationships with others -- all designed to promote safe and healthy living. ”Get Fired Up About Outdoor Cookery!” Have you ever been camping and cooked your food outdoors? Outdoor cookery can be lots of fun, but it can also be dangerous if you do not follow recommended safety practices. It is important to follow basic fire safety tips, no matter what method of outdoor cookery you use. Have a bucket of water, a shovel, or a fire extinguisher nearby when cooking outdoors. Never leave a campfire unattended. Be sure to completely extinguish the camp fire.
It is also important to practice safe food handling techniques when cooking outdoors. Always wash your hands before and after handling food. Never allow hot foods to set out more than two (2) hours, and store leftover food in a cooler with ice. Remember to KNOW and FOLLOW fire and food safety rules next time you and your family go camping!!

OUTDOOR SKILLS-at the Winn Parish Sheriff’s Range on November 10 at 3:30 pm, for those who are registered. Archery, shotgun and black powder are the planned activities.
Calling all 4-H’ers with Pets!! On November 17 at 6:00 pm, in the Courthouse Downstairs meeting room, the 4-H Pet Club will hold their monthly meeting. The 4-H’ers will learn how to care for their pets. For more information, contact Mr. Donny at 628-4528.
LSU and Southern Livestock Entry Dates and Possession Dates: LSU possession dates for Beef Breeding-November 1 and Market Swine- December 1. Entries for the LSU 2010 show are DUE in the 4-H office by DECEMBER 4. There will be Yearling Classes at LSU.
Southern possession dates: Steer – October 1. Beef, Sheep and Goats – November 30; Swine-December 15; 2010 Southern Show entries are DUE in 4-H office by December 4.

Pecans . . . In a Nutshell
Did you know that Louisiana is one of the leading states in the production of pecans? Although most people think of pecans around the holidays as part of a favorite dessert (such as pecan pies or in their brownies), pecans can be used all year long and can be used in a variety of dishes. Pecans can add overall appeal and crunch to various recipes. If you’re looking for an afternoon snack, try a handful of pecans instead of potato chips. These nutritious tree nuts will keep your stomach from growling and are a tasty and healthy substitute for traditional snack foods. These power-packed nuts contain more than 19 vitamins and minerals, and they’re cholesterol-free. Pecans also contain the most antioxidant capacity of any other nut, which means they may help fight certain diseases like cancer and heart disease. Pecans are part of the Meat and Beans group of MyPyramid. Pecans are included in this groupbecause they contain protein to help build body tissues. Pecans are packed with nutrients such as vitamin A, vitamin E, folic acid, calcium, magnesium phosphorus, potassium, several B vitamins and zinc. Sugar Spiced Pecans
1 pound pecan halves
1 cup sugar
3/4 teaspoon cinnamon
1 cup water
1 teaspoon vanilla
Toast pecans on baking sheet for 10 minutes at 300° F. Combine all ingredients, except pecans and vanilla, in small pan. Cook about 5 minutes (until syrup spins a small thread). Remove from heat and add pecans rapidly (but gently) and cool before serving. Georgia Pecan Commission
